Recipe: Overnight Apple Cinnamon Protein Oatmeal

Nothing beats a warm bowl of oatmeal in the fall. That delicious, stick to your ribs, fill your tummy up hearty breakfast that you can feel good feeding to your whole family. But the prep time for oats, especially whole grain or steel cut, can take ages. And most mornings, we don’t have ages to get breakfast on the table. This super easy overnight slow cooker version means you wake up to a yummy breakfast that’s ready to go. It’s packed full of delicious fall flavours and has an extra kick of protein thanks to the added whey powder.

Overnight Apple Cinnamon Protein Oatmeal

Yields: 4 Servings

Ingredients:
2 Tbsp Coconut Oil
1 large apple, diced
1 ½ cups of sugar-free almond milk
1 ½ cups of water
1 cup whole grain oats
3 Tbsp Brown Splenda
1 tsp cinnamon
¼ tsp sea salt
¼ cup dried fruit
¼ cup chopped nuts or seeds such as almonds, walnuts, and/or pumpkin seeds

Additional:
½ scoop New Zealand Whey

Directions:
Grease a slow cooker with the coconut oil. Combine all ingredients, except the Whey Protein Powder, in the slow cooker. Stir. Cover and cook for 7-8 hours on low heat. Stir in Protein Powder. If desired add additional fruit and nuts to the final dish. Enjoy!
