One thing I am famous for is my carrot cake. I have my friends call me regularly asking me to make it – and during this last year I can’t count the number of times I have baked this cake and dropped it off to friends and family! 


1/5 cups flour

1 tsp baking powder

1 tsp cinnamon

1 tsp baking soda

1/5 tsp salt

1 cup sugar (I use coconut sugar)

3/4 cups olive oil

3 eggs

8 carrots (grated)

1 cup chopped walnuts

1 cup raisins


  1. Preheat oven to 350F
  2. Mix all the dry ingredients in a small bowl
  3. Mix oil and sugar in a larger bowl. Add eggs and mix well
  4. Gradually mix in with the dry ingredients
  5. When mixed well, add carrots, walnuts & raisins
  6. Bake for 35 minutes
  7. Enjoy with cream cheese icing!
